hello summer

nothing says hello summer like a quintessential camp out. strike that. a daddy daughter camp out. that being said, i have four daughters, which would technically mean that i'm left with peace and quiet, an empty bed, a good book and my own thoughts for the entire night. however since the babes may not survive camping, it looks like it's her and i for the next 48 hours...while the daddy plays with his remaining three girls. which by the way sounds like loads of fun, and i'm a little sad that i'm not on the invite.

in any event, since we are celebrating the last day of school and a crazy camp out all in the same day, i thought i'd get the party started with one of my favorites....SMORES.

who doesn't like smores? melted chocolate. toasted mallows. crunchy graham wafers. well, these are not just any old smores. these are no campfire needed smores. these are just a little sort of kicked up smores. just the way i like em' smores. you're gonna like em' too smores.

smores

2 cups graham cracker crumbs
1 cup rolled oats
1/3 cup sugar
3 cups miniature marshmallows
1 3/4 cups semisweet chocolate chips
1/4 cup peanut butter chips

Preheat oven to 375 degrees. Combine the crumbs, oats, butter and sugar. Press half the mixture into a greased 9x13 pyrex. Bake for 5 minutes. Remove from oven. Sprinkle with marshmallows and chocolate chips. Top with the remaining crumb mixture. Press firmly. Bake for an additional 10 minutes. Cool completely. Cut into bars.

(or you can use a spoon and eat them warm, right out of the pan. heaven I tell you...pure heaven)
