meat on a stick

in celebration of the daddy in our home, the girls are going caveman-ish on him. this side of offering him a large turkey leg for dinner, daughter #2 had the grand idea of giving him "meat on a stick". how funny is that? straight from her mouth..."i think we should make him meat on a stick, yunno mom!" like everyone should just know what meat on a stick is. luckily, i knew exactly what she was talking about.

a few days earlier, i had been introduced to the most amazing marinade, perfect for... you guessed it...meat on a stick.

i think our celebratory fathers day dinner will go a little something like this:

marinated flank steak on kabobs
(aka: meat on a stick)
garlic roasted red potatoes
grilled corn on the cob
fresh garden salad with buttermilk ranch dressing
and homemade ice cream for dessert

all of these are our daddy's favorites. what better way to celebrate him?

and here's the amazing marinade, so that you too, can offer the fathers in your life "meat on a stick"

marinated flank steak skewers

1 1/2 lbs. flank steak
1/2 c vegetable oil
1/2 c apple juice
1 clove garlic, minced
3/4 cup sugar
1/2 tsp ginger
1/2 cup soy sauce
1 medium onion, chopped
(or 2 tbl. dehydrated onion)

cut flank steak across the grain to ¼” thick slices. (it’s easier to cut the meat when not completely thawed.) mix apple juice, sugar, soy sauce, oil, garlic, ginger and onion. add steak and marinade for 5 – 8 hours stirring occasionally. soak skewers in water. thread steak on skewers and barbeque on hot grill, turning often.
