pizza. pizza.

we love pizza. we eat pizza at least once a week. maybe even more. i have spent years perfecting the most sublime pizza crust known in these parts of the west. it's a quick, easy, no fuss crust. it makes it worth not stopping by the nearest five buck pizza joint at the end of a busy day. it's the perfectly divine crust to end a perfectly crazy day. that's how all my days end. crazy. not to be confused with this pizza crust, which is divine. go it? my day's. crazy. my pizza crust. divine!

the perfect pizza crust

2 1/2 tsp active dry yeast
1 tsp white sugar
1 cup warm water
2 1/2 cups flour
2 tbl olive oil
1 tsp salt

preheat oven to 450 degrees. in a medium bowl or mixer, dissolve yeast and sugar in warm water. stir in flour, salt and oil. mix until smooth. let rest for 5 minutes. turn dough out onto a lightly floured surface and pat or roll into the shape of your pan. transfer crust to a greased cookie sheet or pizza peel. with a fork, prick holes all over surface of the crust. bake crust for 10 minutes. remove from oven and top with desired toppings. continue to bake for additional 5-10 minutes. remove from oven and let cool for 5 minutes before cutting.

i never make just one recipe. i double and triple the crust depending on what plans we have for dinner. it makes a great dessert pizza crust too. oh, and i even throw it on the bbq for some grilled pizza. it's extremely versatile.
